BLACK BEANS & RICE 
1 lb. black beans
1 c. chopped onions
1 green pepper, chopped
1 garlic clove, minced
4 c. cooked rice
1/2 c. olive oil
2 tsp. salt
1/2 tsp. black pepper
1 smoked hambone
1/4 c. wine vinegar
1 onion, sliced into rings

Put washed black beans into 6 cups of water - boil. Saute chopped onions, green pepper and garlic in olive oil 5 minutes. Add to beans with salt, pepper and hambone. Cover and simmer until soft, adding more water if necessary. Serve with rice. Garnish with onion rings. Serves 4. Recommended with seafood.
