CHILI CON TOFU WITH BEANS 
HAVE READY:

5 c. pinto beans, cooked, reserve cooking water or liquid in cans with beans
2 lb. tofu, freeze, thaw, squeeze out and tear into bite-size pieces

WHIP TOGETHER IN BOWL:

1/4 c. soy sauce
1 1/2 tbsp. tomato paste
2 tbsp. peanut butter
1/2 tbsp. onion powder
1/4 tsp. garlic powder
1/2 c. water

Add to this the frozen tofu pieces and mix until all are evenly coated. Then fry seasoned tofu in 1/4 cup oil over medium heat until all liquid is absorbed and tofu is well browned.

SAUTE IN ANOTHER PAN:

2 tbsp. oil
1 lg. green pepper, diced
2 lg. onions, diced
3 cloves garlic, minced

Saute until onions are transparent. Add these and the browned tofu to the cooked beans in a cooking pot, with reserved cooking water to cover all (water can be added if needed).

ADD:

1 tbsp. salt
3 tbsp. chili powder
1 1/2 tbsp. cumin

Bring to a simmer and serve hot with Sesame Tofu Crackers and salad. Tastes like REAL meat chili. Serves 8 to 10.

The chili con tofu with beans is very delicious. I changed up the recipe a bit which is why I cannot properly rate this exact dish, but the one I made was excellent! This is what I did differently: I did not use onions or green pepper in the recipe. I substituted the green peppers with a lot of hot peppers cut up. As for the garlic I used a dash from the jarred garlic. Another change I had made was using Tofu that was refrigerated rather than frozen and cut them into small squares rather than ripping into small bits. Also add a bit more Cumin while the chili is cooking for extra flavor and a small dab of tomato puree. Hope you enjoy.
