MAI THAI COMPOTE 
1 firm Dole banana, peeled & sliced
1 med. Dole fresh pineapple
1 orange, peeled & sliced
1 kiwi, peeled & sliced
1 c. halved strawberries
1/4 c. fresh lime juice
3 tbsp. honey
1 tbsp. light rum or 1 tsp. rum extract
1 tbsp. orange liqueur or orange juice
1/2 tsp. grated lime peel
1/2 c. seedless grapes

Cut pineapple in half lengthwise through crown. Remove fruit, leaving shells intact. Core and chunk pineapple

Mix pineapple with orange, kiwi, berries and grapes.

Combine remaining ingredients except bananas. Pour over fruit. Toss gently to coat. Marinate 1 hour.

Add bananas just before serving. Toss. Spoon fruit into pineapple shells to serve. Serves 6 to 8.
