FILO TRIANGLES WITH CHEESE FILLING | |
FILO TRIANGLES: 1/2 lb. filo or strudel leaves (about 12 sheets) 1/4 lb. butter, melted Lay 1 sheet of filo or strudel leaves on a flat surface. Keep remaining sheets covered with a damp towel to prevent them from drying out. Brush the sheet with melted butter. Fold in half cross-wise. Brush again with melted butter. Cut lengthwise in equal strips, about 2 inches wide. Place a small amount of filling in a corner of each strip. Fold corner with filling over, maintaining triangular shape. Brush top with melted butter. Repeat with remaining filo and filling. Triangles may be refrigerated completely covering overnight or frozen. Before serving triangles, preheat oven to 400 degrees. Lightly butter baking sheets. Place thawed or frozen triangles on baking sheets. Bake 15-20 minutes or until golden. Serve immediately. Makes 48 appetizers. TRIPLE CHEESE FILLING FOR FILO: 1 egg 1 c. shredded mozzarella cheese (4 oz.) 1/2 c. ricotta cheese 2 tbsp. grated Parmesan cheese Dash pepper Dash salt 1/4 tsp. onion powder Beat egg in a small bowl. Add cheeses and seasonings. Mix well. Use 1 teaspoon filling for each filo triangle. Makes enough filling for 48 triangles. |
