THELMA'S YUMMY PORK CHOPS 
4 loin (boneless if desired) pork chops
1-1 1/2 tbsp. rice, yellow or white
Tomatoes, fresh or canned
1/4 c. chopped celery, if desired
1 slice onion per chop
1/2 c. liquid per chop
1 ring green pepper per chop

Brown chops. Place in baking dish with cover, or a roaster pan can be used. Place rice on pork chops, spread around. Put onion slice, celery and tomato pieces over rice. Add water. (Check every so often for water to be added during baking.) Bake 2-3 hours at 350 degrees. Serves 4 (or 2 hungry people!)

Use thick chops. Water, or juice from canned tomatoes may be used.
