PORK CHOP CASSEROLE 
6-8 pork chops
Salt and pepper to taste
2 med. sweet or white potatoes, peeled and sliced
1 lg. onion, sliced
1 lg. green pepper, sliced
1/2 tsp. leaf oregano
1/4 tsp. whole thyme
1 (16 oz.) can tomatoes

Trim all fat from pork chops; season with salt and pepper and brown in skillet to remove excess fat. Add remaining ingredients to crock pot in the order listed. Drain pork chops and place in crock pot. Cover and cook on low 8-10 hours. Season to taste and serve.
