NELLA'S QUICK PIZZA CUPS 
3/4 lb. lean ground beef
1/2 c. chopped onion
1 (8 oz.) can tomato sauce
1 tsp. dried Italian seasoning
1/4 tsp. salt
1/4 tsp. pepper
Non-stick spray coating
2 pkgs. (10 each) refrigerated biscuits
1 c. shredded Mozzarella cheese (4 oz.)
1 c. shredded Monterey Jack cheese (4 oz.)

In large skillet cook ground beef and onion until brown. Drain off fat. Stir in tomato sauce, Italian seasoning, salt and pepper. Spray muffin pans with non-stick spray coating. Place a biscuit in each muffin cup. Press biscuit to cover sides and bottom of cups. Toss together the cheeses.

Place about 1 tablespoon cheese in each biscuit cup. Top with a rounded tablespoon of meat mixture. Top with remaining cheese. If desired, top each pizza cup with sliced green onion, olives, mushrooms or green pepper. bake in 400 degree oven for about 12 minutes or until golden. Cool on rack for 5 minutes. Serve warm. Makes 20 cups. If you don't eat all of them, freeze and reheat in oven after a gospel singing, when you are too tired to cook.
