CUBAN CHICKEN 
3 tbsp. lard
2 onions, diced
2 1/2 c. tomatoes
1 c. water
1 clove
1 tsp. paprika
3 1/2 tsp. salt
Pepper
1 chicken
1 c. rice (uncooked)

Brown the onion in lard; add tomatoes, water, pepper, salt, clove and chicken cut as for frying. Bring to a boil on direct hot flame. Reduce flame and cook 1 hour. Uncover, add rice and continue cooking 1 more hour, watching closely. Serve hot.
