TURNIP CASSEROLE 
2-3 med. turnips
1 c. applesauce
6 tbsp. butter
4 tsp. granulated sugar
3 tsp. salt
1/4 tsp. pepper
2 eggs
1 3/4 c. soft bread crumbs
2 tbsp. melted butter

Cook diced turnip in boiling water until tender. Drain, mash and mix with remaining ingredients except bread crumbs and melted butter. Spoon into a greased 2 quart casserole. Toss crumbs with melted butter and sprinkle over turnip. Cook, then refrigerate until needed. Heat in a 350 degree oven for 1 hour or until hot. Makes 12 servings.
