CAMP GROUND POTATOES 
4 lg. potatoes
1 sm. onion
3 tbsp. butter
1/4 c. water
1 lg. tomato
1/4 c. chopped parsley
Salt and pepper to taste

In a heavy skillet, melt butter when hot, add chunked potatoes and brown well stirring occasionally. Add chopped tomato, onions, salt and pepper. Stir well, reduce to simmer, let steam two minutes, stir, add 1/4 cup water. Simmer 15 minutes or until done, stirring occasionally. Sprinkle with parsley when served.
