CHEESY POTATO CASSEROLE 
2 lb. frozen hash brown potatoes
1 lb. Velveeta (cut into sm. pieces)
2 c. mayonnaise

Thaw potatoes partially. Put all ingredients in bowl and blend together well. Pour into a buttered baking dish and bake at 375 degrees for 1 hour until golden brown. Serves 8-10.

A great recipe; add chopped green onion and/or crumbled bacon bits. I melt mayo and Velveeta together, then mix with potatoes. Leftovers are wonderful for breakfast.
