SCANDINAVIAN APPLE CAKE (FOR
SNACKING)
 
4 lg., tart apples, peeled, cored, chopped
1 c. sugar
1 c. chopped pecans or walnuts
2/3 c. melted butter
2 eggs, beaten
2 tsp. vanilla
2 c. sifted all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. allspice
1 tsp. ground cardamom
1/2 tsp. salt

Preheat oven to 350 degrees. Grease two 8x9 inch cake pans. Combine apples, sugar, nuts, and butter in large bowl. Stir in eggs and vanilla. Sift dry ingredients and add to mixture, stir only to blend. Pour evenly into 2 pans. Bake 45-50 minutes. Cool. Serve slightly warm, at room temperature, or cool in refrigerator.
