SHRIMP CONTINENTAL 
4 tbsp. butter
4 tbsp. flour
2 c. milk
2 c. shredded mild cheddar cheese
Salt and pepper to taste
3 c. cooked rice
1 lb. cooked shrimp
14 oz. can drained mushroom pieces

Melt butter, blend in flour, gradually add milk. Cook, stirring constantly over moderate heat until thickened. Blend in cheese, salt, and pepper. Continue to cook until cheese is melted.

Place rice, sauce, and mushrooms in a casserole dish and mix together. Sprinkle cheese on top of desired. Bake in 350 degree oven for 45 minutes or microwave on HIGH power for 5 minutes, turn and cook another 5-10 minutes or until done.

Since microwave ovens vary in power, you may need to adjust your cooking time.
