CONTINENTAL SALAD 
1 (3 oz.) pkg. lemon or orange Jello
1 1/2 c. grapefruit juice
1/2 c. beet juice
1 (15 or 16 oz.) can or jar diced beets
1/2 c. (or more) chopped celery
Salad greens
Your favorite dressing

Dissolve gelatin in boiling grapefruit juice. Add 1/2 cup beet juice. Refrigerate until partially thickened. Stir in beets and celery. Pour into 1 quart greased mold. To serve, unmold onto serving plate, garnish with greens and serve with your favorite dressing.
