MACARONI AND CHEESE 
1/4 c. butter
1/4 c. enriched flour
1/2 tsp. salt
3 c. milk
1 c. grated Cheddar cheese
8 oz. macaroni noodles

Melt butter in large saucepan. Blend in flour and salt. Gradually add milk, stirring constantly, until sauce is thickened. Add 1 cup grated cheese and stir until melted.

Cook macaroni in boiling salted water until tender, drain. Add to cheese sauce and mix well. Turn mixture into 8 inch square baking dish or pan. Sprinkle top with 1 cup grated cheese.

Bake in oven at 375 degrees about 15 minutes. Remove from oven and place under broiler until cheese is bubbly and lightly browned. 4 to 6 servings.
