SCALLOPED POTATOES 
1 c. shredded cheese
3 tbsp. butter
2 tbsp. all-purpose flour
1 1/2 tsp. salt
1/2 tsp. pepper
3 c. milk
6 med. potatoes, peeled & thinly sliced
2 tbsp. chopped onion

Make white sauce of first 6 ingredients. Place half the potatoes in a greased 2 quart casserole; cover with half the onion to half the sauce. Repeat layers, cover and bake at 350 degrees for about 1 hour, uncover and bake 30 minutes longer.
