HOMEMADE PIZZA 
DOUGH:

5 c. flour
2 tbsp. yeast
2 c. warm water
1 tsp. salt
2 tbsp. olive oil

Dissolve your yeast in part of the warm water with a teaspoon of sugar added. When this bubbles up good you know your yeast is working. Then combine the remaining ingredients and mix well. Knead until smooth and elastic. Grease a large bowl and put dough into that and cover and let rise until doubled.

SAUCE:

1 lg. can tomatoes
1 can tomato paste
1 can tomato sauce

Chop tomatoes finely - cuisinart works great - and add tomato paste and stir.

Oregano
Italian seasoning
Garlic
Pepper and lots of salt
1 sm. onion, chopped finely

If you use a cuisinart, throw your garlic and onion in when you chop your tomatoes.

1 lb. sausage Italian type
1 lb. Mozzarella cheese, grated

Fry sausage and add some anise seed. Drain well and set aside.

Divide your dough in four parts and roll out on floured board. Place on your pizza pan. Sprinkle with Parmesan cheese. Put 1/4 of your sauce on dough - then add your sausage. At this point you can add whatever vegetable your family prefers. I use green pepper, mushrooms, onion and black olives.

Place in oven at 450 degrees for 20 minutes or until crispy, then add 1/4 of your Mozzarella cheese and return to oven until cheese melts. I have red four tile on the bottom rack of my oven which makes a good hot surface to place the pizza pan. The bottom gets crispy this way. Any ceramic tile place carries the brick floor tile.

Makes four circle pans or two cookie sheet pans.
