3/4 c. oil or fat
1 c. sugar
1 c. honey
2 eggs, separated
1 c. coffee
2 1/2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. salt

Blend fat, sugar and egg yolks together. Add honey. Mix and sift dry ingredients and add alternately with coffee. Fold in beaten egg whites. Bake in loaf or oblong cake pan in moderate oven for 45 to 50 minutes. Nuts or raisins may be added or sprinkled on top. Spices may or may not be included.
