FRIED RICE 
1/2 to 1 c. diced ham, pork, or chicken
1/2 c. chopped onion, or chopped green onion
Green peppers, mushrooms or celery (if desired)
3 c. fluffy cold cooked rice
3 tbsp. soy sauce
1 beaten egg

Heat a small amount of oil in a skillet. Add diced meat and onions (green peppers, mushrooms and celery if you included). Saute for 3 minutes stirring often. Stir in cooked rice and soy sauce and heat. Push rice mixture to side of skillet and add beaten egg, cook until firm. Break into small pieces and mix with the rice and serve.
