LASAGNA 
1 lb. sausage
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped carrots
1 (16 oz.) can tomatoes
1 (6 oz.) can tomato paste
1 tsp. salt
1/2 tsp. oregano
1 tsp. black pepper
10 oz. lasagna noodles
3 c. cottage cheese
1/2 c. Parmesan cheese
2 beaten eggs
16 oz. Mozzarella cheese

In skillet, cook sausage, celery, onion and carrots until browned. Drain off fat. Stir in tomatoes and tomato paste, salt, oregano, and pepper. Simmer 30 minutes. Cook lasagna as directions say. Combine cottage cheese, Parmesan cheese and eggs in blender and liquify. Drain noodles. Layer half of noodles in 13 x 9 inch baking dish. Spread with half of cheese mixture, half of meat sauce and half of Mozzarella cheese. Repeat layers. Bake at 350 degrees for 30 minutes.
