PLAIN ROLL DOUGH 
1 pkg. dry yeast (or 1 cake compressed yeast)
1/4 c. water (warm)
1/4. c. sugar
1/4 c. shortening
1 tsp. salt
1 c. milk, scalded
1 slightly beaten egg
3 1/2 c. sifted flour

Soften yeast in warm water. In large bowl combine sugar, shortening and salt. Stir in hot milk; cool to lukewarm.

Add softened yeast, egg and 2 cups of flour, beat well. Gradually add remaining flour - or enough to make a soft dough. Cover, let rise until double (about 1 1/2 hours). Punch down - turn out on floured surface. Shape into rolls. Makes about 24 hot rolls. Bake at 400 degrees for 10-12 minutes.
