BASIC VINAIGRETTE 
1/4-1/2 cup extra virgin olive oil
3 tbsp. Italian red wine vinegar (good quality)
1 tbsp. balsamic vinegar
1/4 tsp. black pepper
3 cloves garlic, minced
1 tsp. sea salt

Whisk or blend together.

A little fresh lemon juice, 1/2 tsp. dry mustard, 1/2 tsp. basil, 1/4 tsp. oregano, 1/2 tsp. chopped shallots, 1 tbsp. fresh minced parsley may be added, if desired, as variations.

Serve over baby greens or any favorite salad vegetables. Also makes a good marinade, or brush on chicken before roasting.
