5 lb. flour (about 12 c.) 3 sticks butter 3 cakes yeast 2 c. scalded milk 2 c. sugar 1 doz. eggs (room temperature) 3/4 box raisins (soaked for a few minutes in hot water) 1 tbsp. salt Scald milk; add butter, salt, sugar; stir until dissolved. When it is lukewarm, crumble yeast in a bowl and add milk mixture; stir until dissolved. Measure flour in large container. Sprinkle raisins on flour. Add beaten eggs, milk mixture and yeast (it is important to keep everything warm). If needed, add more flour. Knead well. Cover and set in warm place. Let rise until double in size (about 1 hour). Put in greased pans. Let rise until double. Bake at 325 degrees for 30-35 minutes. Makes 6 or 7 loaves. |
