SKILLET CHICKEN MANDARIN | |
1 frying chicken (cut up, 3/4 lb.) 1 1/2 tsp. salt 6 tbsp. oil 2 tbsp. finely chopped candied ginger 1/2 tsp. ground savory Pepper 2 c. orange juice 1/2 tsp. paprika 1 (11 oz.) can madarin oranges Combine flour, savory, salt and pepper in a paper bag, add chicken and coat thoroughly. Heat oil in large skillet. Add coated chicken and saute over moderate heat until light brown. Add seasoned flour mixture if any remains and pour 1 1/2 cups orange juice over chicken. Sprinkle with ginger. Cover and bring to a boil, reduce heat and simmer about 30 minutes. Add sugar to remaining orange juice and pour over chicken. Add mushrooms. Dust with paprika, cover and simmer 10 minutes. Garnish with oranges. |
