TOAST COCONUT CAKE 
3 c. sugar
3 sticks butter
6 eggs
3 c. plain flour
1 c. evaporated milk

ICING:

2 c. coconut
1/2 stick butter
1 stick butter
1 (8 oz.) cream cheese
1 box powdered sugar
1/4 c. milk

Mix sugar and butter until it is fluffy. Add eggs, one at a time, beating well after each addition. Add flour and milk. Bake in oven preheated to 325 degrees. Makes 4 layers.

ICING: Toast coconut in 1/2 stick butter. Beat 1 stick of butter and small amount of sugar until well mixed. Add milk and beat well. Add coconut saving 1/2 cup to sprinkle on top.
