TACO RICE SKILLET 
1 lb. hamburger
1 med. onion, chopped
16 oz. can tomatoes
1 c. rice
1 pkg. taco seasoning
1 c. shredded cheddar cheese
2 c. shredded lettuce

Brown meat with onion; drain and cut up tomatoes (reserving juice to make 2 1/2 cups liquid). Add tomatoes, liquid, rice and taco seasoning to beef in skillet. Bring to a boil. Reduce heat, cover and simmer until liquid is absorbed, about 25 minutes. Stir occasionally; top with cheese and lettuce.
