ZUCCHINI QUICHE 
4 eggs, beaten slightly
1 c. grated Cheddar cheese
1/4 tsp. salt
1 tbsp. parsley
4 c. zucchini, grated and drained
1/2 c. vegetable oil
1 c. Bisquick
dash of pepper
1 tbsp. dry onion or regular

Beat eggs slightly. Add remaining ingredients and mix just to moisten. Pour into round 8 or 9-inch cake pan or quiche pan.

Bake at 375°F (350°F for glass pans) for 35 minutes or until brown and set in the middle.
