SPINACH QUICHE 
2 c. fresh mushrooms, sliced
2 cloves garlic, minced
1 tbsp. Dijon mustard
1 c. low-fat cottage cheese
1 (10 oz.) pkg. frozen spinach, thawed & drained
1 1/2 oz. skim Mozzarella cheese slices
1/2 c. onion, diced
1/2 c. egg substitute
1/4 tsp. salt and pepper
Vegetable oil pastry shell

Coat a large skillet with cooking spray; place over medium-high heat until hot. Add mushrooms, onion and garlic; saute until tender. Combine egg and next 4 ingredients, stir in spinach. Add mushroom mixture, stirring well; spoon into prebaked pastry shell. Bake 350 degrees for 35 minutes. Arrange cheese slices over quiche; bake 5 minutes. Let stand 5 minutes before slicing.

Makes 8 servings.
