YEAST ROLLS - CINNAMON ROLLS 
1/3 c. sugar
1/3 c. shortening
1 tsp. salt
2 eggs
2 pkg. yeast
7 c. flour
1 c. well-mashed potatoes (no lumps, must be warm)
2 c. lukewarm water

CINNAMON MIX:

1 c. sugar
2 tbsp. butter
Cinnamon

Mix yeast in warm water; let set. Mix sugar, shortening, salt and 1 1/2 cups warm water. Let cool, then add 2 eggs. Add mashed potatoes to sugar mixture and combine with yeast. Gradually add flour.

Gently mix thoroughly. Place in warm area; let rise double. Gently knead risen dough; remove amount needed for dinner rolls. Roll 3 small balls; place in muffin tins. Let rise, then bake at 350 degrees until golden brown.

Add 1 cup sugar plus desired cinnamon to remainder of dough and mix gently. Roll out very thin. Place small amount of butter/cinnamon mixture; roll dough into log cylinder and slice. Let rise to double and bake at 350 degrees until golden brown.
