COCONUT CHIP COOKIES 
1/2 c. shortening
1 cake mix (lemon, yellow or white)
1 tbsp. water
2 eggs
1 1/3 c. coconut
1 c. chips (chocolate, peanut butter, butterscotch or any combination)

Cream shortening and add 1/2 of cake mix, water, and eggs. Blend well. Add remaining cake mix. Beat until smooth. Stir in coconut and chips. Drop by teaspoon on greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Makes 4 dozen.
