VEGETABLE LASAGNE | |
6 lasagna noodles 2 (8 oz.) cans tomato sauce 3-4 tbsp. tomato paste 1/2 c. sliced mushrooms 1/4 c. chopped onions 1 tsp. oregano 1/2 tsp. basil 1/2 tsp. salt 1/4 tsp. garlic powder 1 c. light cottage cheese 2-3 sm. to med. zucchini, thinly sliced lengthwise 2 c. mozzarella (light) cheese, shredded Cook noodles as directed on package; drain. In small bowl mix together tomato sauce, paste, mushrooms, onions, oregano, basil, salt and garlic powder. Spread 1/2 cup of mixture over bottom of a 9 x 13 inch baking dish. Layer 1/2 of noodles over the sauce. Top with 1/2 of the zucchini. All of the cottage cheese and 1 cup of sauce and top with noodles. Then zucchini, remaining sauce and cheese. Bake at 350 degrees for 30 minutes. Let stand 5 minutes before serving. |
