SWEET AND SOUR RED CABBAGE | |
1 sm. red cabbage 1 onion 2 cooking apples 2 tbsp. cooking oil or bacon fat 2 tbsp. brown sugar 1 tbsp. vinegar Salt and pepper Remove the stalk of cabbage and shred finely. Sprinkle with salt and let stand for 1-2 hours. Chop onion finely and saute but do not brown in hot fat. Squeeze cabbage well to get rid of some of its water content. Add cabbage gradually to the onion and stir well over low heat. Mix in brown sugar, the peeled, cored, and sliced apples. Cover the pan and turn the heat very low. Let the cabbage cook slowly for about 45 minutes, stirring occasionally. Adjust seasoning before serving. Perfect with pork chops. |
