SNOWFLAKES 
2 egg whites
1/3 c. granulated sugar
3/4 tsp. almond extract
1/2 c. flaked coconut
1/4 tsp. salt

Heat oven at 250 degrees. Beat egg whites and salt until soft peaks are formed. Add sugar, a tablespoon at a time, and beat until stiff. Fold in almond extract and coconut. Drop by spoonfuls onto very well-greased cookie sheet. Bake 45 minutes, then turn off heat and keep cookies in oven until they are cool and crisp. Store in tightly covered container.
