WATERMELON PICKLES 
3 c. sugar
1 c. white vinegar
2 sticks cinnamon
1 lg. watermelon rinds, peeled

Peel watermelon rinds. Put into kettle; add enough water to cover rinds. Cook rinds until tender. Take off and drain. Let stand until about 2 hours in colander until they are well drained. Bring sugar, vinegar, and stick of cinnamon to boil. Add drained rinds and boil about 2 or 3 minutes. Put in jars and seal.
