BLACKBERRY JELLY 
2 gal. berries
Water to cover skin from 2 tart apples or crabapples
Sugar

Wash berries. Place with apple skins in large pot and barely cover with water. Bring to boil, cover and simmer 2 hours. Strain, discard pulp and measure juice.

In a large pot, put 1 cup juice to 1 cup sugar, but no more than 4 cups at a time. Bring to rolling boil, stirring constantly. When mixture is thick enough for 2 drops to come off spoon together, boil 1 more minute. Mixture should sheet from spoon (not drops). Pour in sterilized jars and seal. Yield: 4-5 pints.
