QUICHE LORRAINE 
1 (9") unbaked pie shell
4-6 strips of bacon
1 1/2 c. diced Swiss cheese
4 eggs
1 onion, thinly sliced
2 c. half & half cream
1/4 tsp. nutmeg
Salt & pepper to taste

Bake crust in hot oven, 450 degrees for 5 minutes. Cook bacon until crisp. Remove and crumble. Discard fat, reserving 1 tablespoon to saute onion until tender. Sprinkle bottom of shell with bacon, onions and cheese.

Beat eggs lightly, combine with cream and seasonings and pour over cheese, bacon and onions. Bake at 400 degrees for 15 minutes. Reduce temperature to 350 degrees and bake 10-15 minutes longer. Knife inserted must come out clean. Serve hot.
