GRATED POTATOES 
Approx. 6 med. potatoes, boil with skin on
1 can cream of chicken soup
1 pt. sour cream or plain yogurt
1/3 c. butter
1/4 c. onion, grated
1 c. mild cheese (Monterey Jack), grated

Boil potatoes with skins on. Let cool, peel then grate. Mix all ingredients together except small amount of cheese. Mix through grated potatoes. Top with extra cheese. Bake at 350 degrees to heat through and slightly brown.
