HONEY CRUNCH MUFFINS | |
1 1/4 c. flour 1 tsp. baking soda 1/4 tsp. salt 1/4 c. sugar 1 1/4 c. all bran cereal 1 c. buttermilk 1 egg 1/4 c. butter 1/2 c. peanut butter or very finely chopped peanuts TOPPING: 1/8 c. melted butter 1/4 c. brown sugar 1/4 c. very finely chopped peanuts 1/4 c. all bran cereal Combine flour, baking soda, salt and sugar; set aside. Place all bran cereal and buttermilk in large mixer bowl. Let stand 2 minutes or until cereal is softened. Add egg, honey and butter. Mix at medium speed until all ingredients are well combined. Mix in chopped peanuts. Add flour mixture. Mix on low speed only until combined. Portion batter into greased muffin pan. Topping: Stir topping ingredients until well combined. Sprinkle 2 tsp. topping evenly over each muffin. Bake at 400 degrees for 18-20 minutes until lightly brown. |
