VERA CRUZ CHICKEN 
2 tbsp. olive oil
1 (2 1/2 to 3 lb.) fryer, cut up
1 (16 oz.) can whole tomatoes
1 1/2 c. water
1 c. reg. uncooked rice
1 (1 1/2 oz.) pkg. sloppy joe mix
1 (1 1/4 oz.) pkg. chicken gravy mix
1 (10 oz.) pkg. frozen peas, cooked

Brown chicken pieces in olive oil. Add tomatoes, water, rice and mixes and stir to combine ingredients. Cook, covered, until chicken is tender and rice has absorbed the liquid, about 35 minutes. Stir occasionally. Serve garnished with peas. Makes 4 to 6 servings.
