TRIPE SAUCE 
1 tsp. brown sugar
1 tsp. dry mustard
1 tsp. black pepper, freshly ground
1 tbsp. garlic (sic) vinegar
1/2 pt. (1 c.) melted butter

Mix brown sugar, mustard and black pepper. Add mixture to garlic vinegar. When well blended, stir into melted butter. Can be used for boiled tripe, calf's head, boiled tongue, or pig's trotters.
