2 pkgs. dry yeast 2 tbsp. sugar 1 tbsp. garlic salt 1 tbsp. garlic powder 1 tbsp. lard 3 lbs. approx. Hi-gluten flour Cornmeal Chopped garlic Olive oil Put 1 1/2 cups of warm water into mixer bowl and add yeast, sugar, garlic salt, garlic powder and lard. Let sit in warm spot for approximately 1 hour. Use mixer with dough hook and slowly add flour until the sides of bowl are clean. Dough should be sticky but not stick to your hand. Oil very lightly, cover and set aside 2 to 3 hours or until it doubles in size. Roll dough into 1/2" or 1" diameter strips, 4" to 8" in length. Place on bed of cornmeal on a sheet pan. Bake in 400 to 500 degree oven until brown. Crispy or soft, your choice. Sprinkle with mixture of chopped garlic and oil and serve warm. |
