SCALLOPED POTATOES AND HAM 
1/3 c. chopped onion
3 tbsp. chopped green pepper
1/4 c. plus 1 tbsp. butter
1/4 c. flour
2 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. mustard
1 c. shredded American cheese
3 c. cooked ham
4 c. cubed, cooked potatoes
1/4 c. dry bread crumbs

Saute onion and green pepper in 1/4 cup butter in skillet until tender. Stir in flour. Gradually add milk, salt, pepper and mustard. Cook, stirring constantly until smooth. Cook over medium heat until thick. Add cheese; stir until melted.

Combine ham and potatoes with this mixture and put into greased 2 quart casserole. I also add 1 can of corn to this mixture.

Combine 1 tablespoon butter melted with bread crumbs and sprinkle over casserole. Bake 350 degrees, 30 minutes.
