CHOP SUEY 
1/4 c. butter or shortening
1 1/2 c. diced pork or chicken
1 c. onion, diced or sliced
1 tsp. salt
1/4 tsp. pepper
1 c. celery, cut up fine
3/4 c. water
1 can bean sprouts, drained

Melt butter in pan. Add meat; stir and sear without burning. Add onions and fry 5 minutes. Add drained bean sprouts. Mix together and heat to boiling. Add thickening, below, stirring lightly and cook 5 minutes. Serve over dry noodles or rice.

THICKENING:

1/3 c. cold water
2 tbsp. cornstarch
2 tsp. La Choy sauce
1 tsp. sugar

Mix together.
