POTATOES ROMANOFF 
6-8 potatoes, boiled, peeled, and grated
6 scallions, chopped
1 pt. sour cream
1 1/2 c. Cheddar cheese, grated, divided

Stir together potatoes, scallions, sour cream and 1 cup of grated cheese. Put in baking dish. Top with remaining cheese. Refrigerate overnight. Bake at 350 degrees for 30 minutes.
