MUTH'S INDIAN PUDDING | |
1/4 c. corn meal 1 c. cold salted water (1 tsp. salt) 2 c. milk 1 beaten egg 1/4 c. sugar 1/2 c. molasses 1 tbsp. butter 1 tsp. cinnamon 1/2 tsp. ginger Mix together cornmeal and salted water. Then stir in the scalded milk. Bring this to a boil, stirring, for 10 minutes. Blend in a mixture of the egg, sugar, molasses, butter, cinnomon and ginger. Pour into a buttered casserole dish. Bake for 1/2 hour at 300 degrees. Then stir in 1 more cup of cold milk. Continue to bake for 2 hours at 300 degrees. Serve hot with vanilla ice cream on top. |
