SALMON PATTIES 
1 (16 oz.) can salmon
1/3 c. minced onion (optional)
1 1/2 tsp. baking powder
1 egg
1/2 c. flour

Drain salmon, set aside 2 tablespoons juice. In a medium bowl, mix salmon, egg and onion until sticky. Stir in flour and baking powder. Add juice. Form into patties, makes 6 or 8. Fry in butter until golden brown, 5 to 10 minutes. These patties raise higher and fuller than using crackers.
