TONY TOUGH GUY'S ITALIAN RABES 
2 bunches of Italian rabe/rappini (greens)
olive oil
clove garlic
sun dried tomatoes (bag)
Romano cheese
Genoa salami 1/2 pound
Italian bread crumbs
1 lemon

In a 3-4 quart pot, bring water to a boil then add rabes to water after trimming ends and washing them well. (This helps to remove the bitter taste). Adding a freshly squeezed lemon to the pot helps to break down the acidity.

Steam rabes in boiling water for about 15 minutes.

While waiting oil a sauté pan with olive oil and add the clove of chopped garlic to pan.

After a few minutes of heating the oil and garlic, add the sun-dried tomatoes and salami.

Drain the rabes in colander; add to the sauté pan and mix with ingredients.

After 5 minutes of sauté add the Romano for some taste and the bread crumbs for some texture.

Now you’re ready to serve 'Tony Tough Guy's Italian Rabes' - also known in some parts as Utica greens.
