VEAL SCALLOPINI 
Veal rounds
Tomato juice
Onion
1 can mushrooms

Cut rounds into small pieces.

1. Brown onions in skillet, when brown, remove from pan and put in casserole dish.

2. Brown seasoned rounds in skillet, when brown, place in casserole on top of onions.

3. Add mushrooms to casserole.

4. Pour tomato juice in casserole, just covering all ingredients.

5. Cover with aluminum foil. Bake at 350 degrees for 1 hour.

6. Sprinkle with Parmesan cheese and bake an additional 15 minutes.
