FRESH BLACKBERRY PUDDING 
4 c. apple juice
1 tsp. lemon juice
1/4 c. honey
1 tsp. vanilla
2 tbsp. arrowroot
2 c. fresh blackberries

Combine all ingredients in a saucepan, except blackberries. Bring to a boil; lower heat and add blackberries. Cook, stirring, for 1 minute. Remove from heat. Pour into 8 serving dishes. Chill until firm.
