COOL CURRIED SHRIMP SALAD 
2 lb. med. shrimp, fresh or frozen, in shells
Salt
1/3 c. mayonnaise
1 tbsp. lemon juice
3/4 tsp. curry
1/4 c. chopped green onions
4 lettuce leaves

Early in day: Thaw frozen shrimp.

Peel and devein shrimp. In large saucepan, heat 6 cups water and 1 tablespoon salt to boiling; add shrimp and simmer 1-2 minute(s), until just tender. Drain. Refrigerate until well chilled.

About 10 minutes before serving: In medium bowl combine mayonnaise, lemon juice, 1 teaspoon salt and curry. Add shrimp and green onions; toss. Serve on lettuce leaves. Makes 4 servings.
